Xoma typically says that they are booked for the dates because their website sucks. Reach out to them via WhatsApp to check availability more directly (and effectively).
Chain Hotels (see note below)
We don't recommend staying at the bigger brand hotels as they sit outside of our suggested area. As well, their surroundings aren't as beautiful as the Airbnbs or boutique hotels we previously suggested. Equally, the price range to stay in these hotels is about the same as an Airbnb or one of the boutique hotels.
